Instructions
Things You'll Need:
- 6-ozs self raising flour
- 4-ozs margarine
- 7-ozs sugar
- 2-ozs plain chocolate
- 2 eggs (whites and yolks separated)
- 8 tblspns milk
- 2 tspns finely shreded candied peel
- 1/2 tspn salt
- 1/2 tspn cinnamon
- 1/2 tspn pudding spice
- 1/4 tspn cloves, ground
- Icing (optional)
- 4-oz margarine
- 3-ozs icing sugar
- 2 tspns cocoa powder
- 1 tbspn hot water
- vanilla essence
- 8 inch cake tin

Add 4oz of margarine to 7oz of sugar and cream together in a mixing bowl until they are light and fluffy.

Melt the 2ozs chocolate and blend with the 2 egg yolks and add to the mix.

Mix the salt and spices to the 6oz of flour and stir in to the mix adding the milk a little at a time.

Fold in the beaten egg whites and the candied peel. Pour into a greased cake tin.

Bake in the oven at 350F for around 45 minutes.

To make the icing, cream the 4ozs margarine, the 3ozs icing sugar and cocoa together in a mixing bowl.

Stir in the hot water and a few drops of vanilla essence and beat in.

Spread the icing evenly over the cake once it has cooled.
